Warning: I am not savvy at taking photos of food. There, I said it. This picture is not great, but I still wanted to share, so here ya go!

I imagine lots of you know about this kind o pie, but my mama used to make this for us when we were little. She calls it poor man’s pie… I’m not sure why, but there you have it. Prolly because it doesn’t have many ingredients. It is a great and refreshing treat that is easy to make and just reminds me of summer. All you do is put one cup of boiling water into a package of jello (I use strawberry because it is my fav) stir it all around. Add one cup of ice and stir that all around (I’m not patient enough to wait for the ice to fully melt so I end up taking out the small pieces of ice after they have melted some). Stick that mixture into the fridge for about 15 minutes or so then add 8 oz of cool whip and mix well. I have tried using light cool whip with this, but it doesn’t seem to get thick enough with the light stuff, so just go with full octane. Then poor it into a graham cracker crust (you could make one, but I just use a store bought one because that’s how I roll) and stick it in the fridge over night. Let it firm up and then cut and eat outside on a warm day. YUUUMMMM!
